Nutrition wise, I cannot think of a better dish for anything really…salad, appetizer, meze or main course.
First of all the barley rusks are high in fiber, specifically soluble fiber that helps lower blood cholesterol & glucose levels, hence providing a better control of insulin. Fiber can also promote weight loss as it reduces hunger and increases satiety. The tomatoes & olive oil are excellent sources of antioxidants, such as vitamin E. The olive oil contains healthy fats, specifically monounsaturated fats (omega 9), and the cheese is a great source of protein and calcium.
Yes, this is a COMPLETE MEAL, but also a healthy meal for several reasons: It is a rich source of fiber, it fills you up, it provides antioxidants and vitamins, it contains good carbs, good fats and protein.
Ingredients
- 1 large round barley rusk (60g) or 4 mini barley rusks (15g each)
- 1-2 medium to large tomato mature & pilled
- 35g feta cheese
- Extra virgin olive oil
- Pinch of salt
Instructions
- Moisten the rusks ( paximadia ), with water and drizzle with the olive oil.
- Use a grater to grate the pilled tomato.
- In a small bowl put the shredded tomato, olive oil, oregano & salt
- Crumble the feta cheese with a fork or with your hands
- Spread the grated tomato on the rusks and add the crumbled cheese
- Sprinkle with the oregano and drizzle with some extra olive oil and a bit of balsamic
