  • SOOTHING AND THUS USEFUL WHEN DEALING WITH A SORE MOUTH – A SIDE EFFECT OF CHEMOTHERAPY

MELON, COCONUT & MINT ICE LOLLY

Ingredients (makes 6 x 50 ml ice lollies)

  • 4 tbsp. honey (you can use 2 tbsp.)
  • ½ tsp grated fresh ginger
  • A few springs of mint, bashed
  • 150g melon, deseeded and chopped
  • 100ml coconut milk or yoghurt
  • Squeeze of lime (optional)

Instructions

  1. Put the honey in a very small saucepan with 1 tablespoon water, the ginger and the mint. Heat gently until the honey has melted, then remove from heat and leave to infuse for a few minutes.
  2. Put the chopped melon and coconut milk in a blender and squeeze over some lime if using.
  3. Strain the honey syrup through a sieve into the blender. Blitz until smooth, then pour into moulds.
  4. Freeze until firm. To unmould dip into hot water for a few minutes

GREEN TEA (MATCHA) AND PEACH ICE LOLLY

Ingredients (makes 6 x 50 ml ice lollies)

  • 1 tsp of matcha tea (or contents of 1 1 tea bag)
  • 150g peaches (approx. 2 medium ) –canned are fine
  • 1-2 tbsp of runny honey

 Instructions

  1. Pour 150ml hot water over the tea and leave to infuse for several hours.
  2. Strain this into a blender along with the peaches and honey.
  3. Once blended pour into Freeze until firm. To unmould dip into hot water for a few minutes
